Description
The wine displays a bright, pale yellow hue with green tints. The nose is elegant and fruity, revealing vegetal aromas, such as boxwood or blackcurrant buds, combined with notes of citrus.
The wine is very fresh, lively and full with an explosive, complex and fruity palate. The aromas perceived on the nose come through again, accentuated by aeration. The finish is fresh and lingering with hints of boxwood and citrus.
Terroir & Vinification
Clay-limestone soils mixed with tawny sands to express the full potential of the Sauvignon. A 12-hour cold skin maceration is carried out to extract the aromatic precursors. Before pneumatic pressing, a static running off is carried out to select the juices. Fermentation is performed at 15°C. The fine lees are re-introduced at the end of fermentation to intensify the varietal aromas.
